Easy Boozy Chicken Fajitas

These fajitas are easy to prepare, hard to mess up and actually pretty healthy even though they are cooked in beer and cider! Skip the cheese, put in wholemeal wraps and serve with salad for an easy guilt-free dinner. Leftovers can be wrapped up and thrown in the lunchbox for the next day too.
Takes about 1 hour to cook with 10 minutes of preparation time.
Makes 5 fajitas.
Ingredients
3 Chicken Breasts
1 Packet of Fajita Seasoning
1 medium bottle or can of beer
1 can of chopped Tomatoes
1/3rd of a Cup of Cider
Coriander
5 Tortilla Wraps
Method
Rub the fajita seasoning into the chicken breasts.
Add a little oil to a pan (big enough to fry 3 chicken breasts and tall enough to add some liquid).
Turn up to a medium heat and fry the chicken breasts for 3 minutes, flip then fry for another 3 minutes.
Add the beer and cider. Then simmer for about 25 minutes.
Remove the chicken from the pan and add in the chopped tomatoes.
Shred the chicken breasts with forks then add back to the pan.
Cook for around 30 minutes, stirring occasionally until most of the water has evaporated and your left with a sauce.
Put the chicken into wraps and serve with salad or rice.
